He turned away as she spoke--not to shut her out, but because he had to look away to take in all that she was saying without overtly breaking down. Gathering breakfast was a plausible deflection, and he focused on that instead of the tears threatening to well up. It did not help, probably, that he could feel Rey's emotion, which while a mere reflection of his own for his sister created something like a feedback loop.
